Drew McCoy brings creativity, a calm demeanor, and some serious cocktail chops to his role as Restaurant Manager at Dawn Manor. With more than a decade of experience behind the bar and in management roles across Madison’s hospitality scene, Drew is known for pairing operational know-how with a design-savvy, guest-focused approach.

Before joining the Dawn Manor team, Drew served as Bar Manager at DLUX and Food & Beverage AGM at Sheraton Madison, overseeing everything from staff training and cost controls to bar menus and banquet service. He held leadership positions at Lucille and Salvatore’s Tomato Pies, where he managed front-of-house operations, special events, and social media.

From managing special events to building standout beverage programs, Drew’s vision and versatility are vital to our success at Dawn Manor. We’re so grateful to have him on the team!
