Guided by a passion for thoughtful presentation, seasonal sourcing, and collaborative leadership, Chef JJ Kolek brings more than ten years of culinary expertise to Dawn Manor.
JJ studied at Le Cordon Bleu in Minneapolis, has led high-performing teams in restaurants, hotels, and destination dining spots across Wisconsin and Minnesota. His experience includes roles as Head Chef at Volstead’s Emporium, Sous Chef at Driftless Glen Distillery, and Chef de Partie at the Travail Kitchen & Amusements, where he helped craft tasting menus and special event offerings rooted in modern technique and regional ingredients.
Drawing on his Midwestern roots, JJ creates dishes that balance bold flavors with refined technique and thoughtful presentation. Whether he’s developing a new menu, training rising talent, or crafting nightly specials, Chef JJ brings energy, expertise, and artistry to each plate and every service.
